Materials for one cake:
300 g of thawed puff pastry
50-70 g of marzipan, sliced or cut into cubes
8 plums with no pits, cut into large slices
20 g of butter (or coconut oil)
2 tablespoons of sugar
For submission:
Sugar powder
Mint leaves
Preparation:
Heat up the oven to 190 degrees (C). Cut the puff pastry so it fits the size of the sheet pan. Smear some butter across the pan and place the pastry in it. Place the plums and the marzipan on top of the pastry. Put some sugar and butter on top. Bake the cake for about half an hour, or until the pastry turns golden, and the plums become soft and bubbly. Serve hot and wait until the cake cools down to room temperature, with sugar powder and mint leaves on top.
*It’s important to thaw the pastry in advance by moving it from the freezer to the fridge.
